Аннотация

The article provides an overview of the structure of gelatin domestic market as one of the elements of the food industry. The material reflects the main properties of gelatin, considers the export component of the market, the main players in the world and domestic markets. It presents the structure of consumption by types of food ingredients in natural terms, as well as the structure of the release of new products by category.
