The article is devoted to the process of optimization of the production program at dairy processing enterprises based on taking into account seasonal fluctuations by leveling them. In the context of import substitution of raw materials and resources, the efficiency of the processing industry depends not only on the internal production capabilities of enterprises, but also on external seasonal factors. With effective management, the specialists of the enterprise in the processes of developing long-term plans, strategies and production programs should not only take these factors into account, but also find ways to level them.
